Georgian Pickled eggplant

Today I want to introduce you the Georgian recipe of cooking marinated eggplant, so-called Georgian eggplant. Do you want to surprise your guests with unusual spicy snack? Do you want to impress your guests and expand their knowledge in the preparation of pickled eggplants? Then this recipe is exactly what you need!

Georgian eggplant: the list of ingredients

  • Eggplant – 1 kilo;
  • Olive oil – 400 ml;
  • Vinegar – 5 tbsp;
  • Onions – 1 pc;
  • Garlic – 1 pc;
  • Chili – 3-4 pod;
  • Bay Leaf – 4 pieces;
  • Carnation – 4 pieces;
  • Fennel seeds – 1 tbsp;
  • Coriander seeds – 1 tbsp;
  • Grain of mustard – 1 tbsp;
  • Honey – 150 gr.

Georgian eggplant: method of preparation

Wash the eggplants and slice them into thin slices. Put them on a baking sheet, brush with olive oil and bake in the oven for 15-20 minutes at 200 degrees temperature. Peel onions and garlic. Chile pepper to clear it from seeds and stalks. Chop the onion and the garlic in small cubes and peppers into thin strips. Start to fry them on a frying pan, liberally bathed in olive oil, and then add Bay leaf, cloves, mustard seeds, fennel seeds and coriander. Constantly stir the resulting spicy mixture, to prevent it from scorch. When it is thoroughly warmed up – remove the pan from the heat.

Prepare the marinade. On a very low heat melt the honey to a liquid consistency, pour the remaining olive oil and vinegar. Add species and salt to it and boil. In prepared sterilized jars start to lay out the roasted eggplant rings. As you upload, add to it the prepared pan fried seasoning. When you fill the jar – fill it with the marinade so that it completely covered the contents. Immediately roll up the finished jars and let them cool down. Flip them upside down and wrap in a towel or sweater.

The Georgian eggplant is perfectly stored in a cool dark place because of its oil and vinegar high content. The appetizer is really spicy and very unusual. This dish is not recommended to eat for the people suffering from chronic gastritis or gastric ulcer.
