In great variety of snacks there are some very popular, especially among men – they are spicy snacks. There are many similar recipes; however, there aren’t so much really tasty one. Classically marinated eggplant with garlic are the most easy to cook and can be appropriate for any holiday table. My grandmother taught me this recipe. Thanks to her, no celebration in my house is complete without this delicious dish. The preparation of pickled eggplants is not difficult and soon you realize it yourself. So, let’s get started…Ingredients:

  • 1 kg. Eggplant;
  • 20 cloves of garlic;
  • 1 bunch of parsley;
  • 10 gr. celery;
  • 300 gr. hot peppers;
  • 2 cups vinegar;
  • 8 tbsp. salt;
  • water.

Method of preparation:

I like to please people I love with delicious homemade pickles. This food is perfect for any dinner. One of my favorite recipes is “Pickled eggplant with garlic”. For pickling I pick young medium size eggplants. Because young eggplants have much smaller grains and as a result they are much tastier and softer, unlike the old ones. Next, cut away the peduncle, slice, sprinkle with salt and leave for 3-4 hours. After that, pour the brine and boil it. Then place the ingredients under the press until all the liquid is gone. For the filling we will need to prepare in advance some garlic, parsley, celery and capsicum. Chop all carefully and stuff previously prepared eggplants. Then take the cans and fill them with eggplants. Pour vinegar and seal hermetically. Put jars to the basement until winter.
