Tomato-basil marmalade

 

I adore the combination of contradictory tastes in food. For example, I like to eat meat with sweet berry sauces or enjoy garlic ice-cream. Now I would like to share with you, my dear readers, the recipe of very delicious tomato-basil marmalade.

Ingridients:

  • Tomatoes- 2,5 kg.
  • 2 lemons and dried peel of 2 lemons
  • White wine – 250 ml.
  • Sugar- 800 gr.
  • Fresh basil

Method:

Cut tomatoes for cloves and clean from seeds. Boil the white wine, dried lemon peels, 2 lemons juice and sugar for several minutes. Boil it till 50% away. Add tomato cloves and boil it on medium fire till homogeneous paste. Then add chopped and slightly blanched basil. Boil it for 3 minutes. Put into the sterilized jam-jars. It’s up to you how much salt to add not to have too sweet marmalade. I prefer to add red cayenne as well. Marmalade has fantastic sweet and spicy taste. You can eat it with any kind of meat.
